San Francisco chef Cecilia Chiang, who was a pioneer of Chinese cuisine in the United States,
died Wednesday. She was 100. Chiang was the owner, chef and mastermind behind the game -
changing San Francisco restaurant, the Mandarin. She is widely credited with bringing real Chinese
food to America and was a celebrity chef before celebrity chefs were popularized.
Chiang, who was born near Shanghai, came from an upper-class Chinese family. Although she
wasn't shy about acknowledging her good fortune, she faced other difficulties. Convincing the dining
public that Chinese food didn't have to be Thursday's cheap take - out option,

Despite the common appearing of tablet computers and e-readers, we simply cannot break our
addiction to paper. An estimated four billion trees are cut down every year to make paper or
cardboard, an energy-consuming process with a vast environmental footprint. Now chemist Yadong
Yin of the University of California, Riverside, and his colleagues have developed “rewritable”
paper that could help control that_impact.
Printed rewritable paper is made using Prussian blue nanoparticles(纳米粒子). The researchers
coated conventional paper with nanoparticles of two chemicals: Prussian blue that gives blueprints
their characteristic color, and titanium dioxide(二氧化钛), a substance used in sunscreens.
UV light makes the titanium dioxide nanoparticles donate electrons(电子) to their Prussian blue
neighbors, shifting its color from midnight blue to milky white.
By shining that UV light through a transparent(透明的) screen marked with black text, the
researchers “printed” blue text on a white background. The text lasts about five days and then
naturally fades away: “Every morning I could just push a button, and a printer would give me a
fresh newspaper to read over breakfast,” Yin says.
The paper can also be reset by heating and reused more than 80 times, a significant
improvement over previous types of rewritable paper. “The key advantages are high reusability and
stability, easy handling and low cost,” says Sean X. Zhang, a materials scientist at Jilin University
in China, who was not involved in the study but has also worked on developing rewritable paper. By
comparison, technologies such as electronic ink—used for Amazon's Kindle Paperwhite—involve
moving charged black-and-white particles around, which requires electronics.
Since reporting their invention in Nano Letters early this year, the scientists have used a digital
projector to replace their transparent screen. They are now working on increasing the number of
times the paper can be reused. Zhang says a key difficulty will be persuading companies to develop
the unconventional UV control needed for widespread use. Even though commercialization could be
a few years away, Yin says, “We've had a lot of discussions with industry investors.”

The vaccine( 疫 苗 ) news continues to seem very encouraging. Britain started its mass
vaccination effort and the U.S. isn't far behind.
But there is still one dark cloud hanging over the vaccines that many people don't yet
understand.
The vaccines will be much less effective at preventing death and illness in 2021 if they are
introduced into a population where the coronavirus is still severe—as is now the case in the U.S.
A vaccine is like a fire hose(消防龙头). A vaccine that's 95 percent effective, as Moderna's and
Pfizer's versions appear to be, is a powerful fire hose. But the size of a fire is still a bigger
determinant of how much destruction occurs.
At the current level of infection in the U.S.(about 200,000 confirmed new infections per day),
a vaccine that is 95 percent effective—distributed at the expected pace—would still leave a terrible
toll(伤亡人数) in the six months after it was introduced. Almost 10 million or so Americans would
catch the virus, and more than 160,000 would die.
This is far worse than the toll in a different situation where the vaccine was only 50 percent
effective but the U.S. had reduced the infection rate to its level in early September(about 35,000
new daily cases). In that case, the death toll in the next six months would be kept to about 60,000.
It's worth pausing for a moment on this comparison. If the U.S. had maintained its infection
rate from September and Moderna and Pfizer had announced this fall that their vaccines were only
50 percent effective, a lot of people would have panicked.
But the reality we have is actually worse.
How could this be? No vaccine can get rid of a pandemic immediately, just as no fire hose can
put out a forest fire. While the vaccine is being distributed, the virus continues to do damage.
There is one positive way to look at this: Measures that reduce the virus's spread—like mask-
wearing, social distancing and rapid-result testing—can still have great consequences. They can
save more than 100,000 lives in coming months.

The Anti-food Waste Campaign
Our school launched an anti-food waste campaign last week to help raise students' awareness
of food waste and the consequences it brings. Lessons were designed and given to educate students
to value food and reduce food loss. A follow-up speech contest was held to further promote the
idea. All the students took an active part in the campaign and felt like making their contributions. At
lunch time, everyone now takes just the proper amount of food and makes an effort to avoid
leftovers.

W: Fine. Maybe I can sing a song. My voice isn't too terrible!
M: That's great. It'll start around 3 in the afternoon.
W: Oh no! I'll be working at Susan's cookery shop until 4!
M: Can you escape for just 5 minutes?
W: Not really, but if you want, I can sing my song at the end of the show instead of the
beginning.

W: Hey, Todd. I hear you've joined a gym.
M: Yeah, a really nice one downtown. It just opened about a month ago.
W: What's the name?
M: The name is “Fitness Club”.
W: Good name.
M: Yeah, it has all the latest machines. Actually some of the machines are kind of tricky, I really
don't know how they work yet.
W: Are there people that can help you?
M: Yeah, actually you can't use any of the equipment unless you get trained for it. You have to
have guidance.
W: OK, do they have classes?
M: They do. They have yoga, boxing, dancing, so the schedule looks pretty diverse.
W: That's good.
M: And they have an actual gym floor, so you can play basketball. They also have volleyball
tournaments. If you like more traditional sport, like tennis, they also have tennis courts. You can do
that as well.
W: Oh, I do like tennis. I love tennis actually. So how much would it cost per month?
M: Well, it's kind of expensive. About fifty dollars a month. But if you buy a membership, it's
720 dollars for two years, 480 dollars for one year.

Good evening. I'm Amy Watson from Sunshine Security. I'd like to talk about what we as house
owners can do to best protect our property.
These days many people are forgetting the basics, things our parents and grandparents told us,
like “lock the back door”, “don't leave any windows open”. High-tech tools such as cameras
can be of use, but good old-fashioned ways can help too. Fences, strong gates and of course man's
best friend, a dog, can discourage most of the thieves.
As to holidaymakers, the best advice is not to advertise the fact that you are going on vacation.
Stop all deliveries so that they don't pile up outside. Tell a neighbour to look out for unusual activity
and make sure all windows and doors firmly closed and locked.
Plants outside the house may look pretty, but they can be used to break into the house. The
same can also be said for decorative wooden supports.
Remember thieves don't spend ten minutes trying to get into a house—they'll move on, to the
next house where somebody fails to follow these simple suggestions.
